First of all, I need to express gratitude for the prayers that have been offered up for us. It is so amazing to know that friends--both new and long-standing (I'm trying to avoid the word "old") are praying for us.
A little update: we've linked up with another CHI family in Jacksonville. They know someone (this is not leading to six degrees to Kevin Bacon--I promise) who successfully appealed their rejection. These two families also sent personal checks. We have looked at the I 600-A instructions and not only does it not exclude personal checks, there is a note that personal checks will be treated as an EBT. Based on this information, we are encouraged to appeal the decision. Now we would ask prayer to decide if a written appeal is sufficient or if an in-person one would be more compelling. The successful appeal was done in person. We would like to avoid a road trip if possible, but we are willing to go if that improves our chances for a successful appeal. Please pray for wisdom as we move toward appealing the USCIS decision.
And, just a little insight to other events to prepare our home for our new member. We are all working to learn Spanish (although Audrey is way ahead!). We are also working on increasing our repertoire of Colombian foods (which was zero a few months ago). I am using "Secrets of Colombian Cooking" by Patricia McCausland-Gallo. I have a friend from Colombia and she verifies the authenticity of the recipes. Audrey made the first recipe (a dessert, of course), Tres Leches. I started this post with a picture of us sitting down to a Colombian meal of Almojabanas and Arroz con Pollo. This recipe required me to also make Hogao del Pacifico to go in it. We all really enjoyed the food and look forward to having other new recipes (I also got to try out some Colombian-type foods at a Cuban restaurant with my Colombian friend.)
